if you HAVE to have difference between variant forms of Khajiit (IE, making Senche Raht stronger and tougher because of their bigger size), then you could just add a further modification to stats via scripting.
there are mods that change what racial stats are, I suggest skipping using race to alter the paperdoll and instead just trying to modify it directly.
